Tamarind BBQ Spare Ribs- Smoked chili and coconut sugar rubbed ribs are slow cooked tender then glazed with a spicy, tangy bbq sauce made from tamarind, chipotle and black pepper. These ribs get cooked in the oven so you can make them year round even if you don’t have a grill.
Red Chili & Jerk Spice Cauliflower- A whole roasted head of cauliflower gets glazed in a jerk sauce made with ginger, tamari, habanero, allspice, lime and piri piri chili.
Smokey Long Cook Greens- Collard greens slowly cooked til melting tender with onion, garlic, chipotle and finished with vinegar.
Whole Roasted Carrots- Skin on carrots roasted with garlic, paired with herb, scallion and lime spiked coconut yogurt. Brightened with hot pickled rhubarb and cucumber dressing.
Pikliz- You know what’s up. Haiti in a jar- hot, crunchy, bright, addictive.
Spiced Cocoa Ice Cream- Coconut milk and cashew based cocoa ice cream spiced with cinnamon, star anise, vanilla, folded with habanero salted peanut brittle and swirls of coconut caramel.
